Ingredients
- Dark chocolate200 g
- Coconut flour150 g
- Coconut milk100 ml
- Greek yogurt 0%50 g
- Peanut butter1 tablespoon
Procedure
0. In a bowl, combine the coconut flour and Greek yogurt. Gradually add the coconut milk until the mixture is firm and workable. If you prefer a sweeter filling, add maple syrup or honey.
1. If you'd like to further increase the protein content, add almond or peanut butter and mix well. Compact the mixture and shape it into rectangles or balls, depending on your preferred shape for your Bounty.
2. Arrange the rectangles on a baking sheet lined with parchment paper. Place the sheet in the freezer for about 30 minutes, so that the filling can solidify.
3. Melt the dark chocolate in a double boiler or in the microwave. Remove the coconut rectangles from the freezer and dip them one at a time in the melted chocolate, covering them completely. Let the excess chocolate drip off and then place them back on the baking sheet.
4. Place the chocolate-covered Bounty in the refrigerator for about 1 hour, or until the chocolate has solidified.
