  • 0. On a pastry board, make a well with the two flours. In the center, add the eggs, oil, and salt. Using a fork, begin to incorporate the flours, then knead by hand for about 8-10 minutes, until the dough is firm, smooth, and slightly elastic. If the dough is too dry, add a teaspoon of water. If it's too sticky, add a little rice flour.
  • 1. Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature. This will make the dough easier to roll out.
  • 2. Divide the dough into 2-3 pieces. On a lightly floured surface, roll out with a rolling pin until about 2 mm thick. Alternatively, use a pasta machine, starting with the thickest setting and gradually working your way down to the thinnest setting (about 6 or 7 out of 9).
  • 3. Dust the pasta sheet well with rice flour, fold it over, and cut strips about 6-8 mm wide. Carefully unroll the tagliatelle and arrange them well-spaced on a floured tray.
  • 4. Bring a large pot of salted water to a boil. Cook the tagliatelle for 3-4 minutes, until they rise to the surface. Drain carefully.
