  • 0. In a large saucepan, heat the olive oil over medium heat. Add the minced garlic and sliced leeks. Sauté for about 3-4 minutes until translucent.
  • 1. Add the peppers and potatoes to the pot and stir well. Cook for another 5 minutes, stirring occasionally.
  • 2. Add the peeled tomatoes to the pot and crush them lightly with a wooden spoon. Add the vegetable broth and bring to a boil. Reduce the heat, cover, and simmer for about 20 minutes, or until the potatoes are tender.
  • 3. Add the chopped spinach in the last minute of cooking, allowing it to gently wilt in the hot broth.
  • 4. Taste and season with salt and pepper, and add chopped herbs to taste. Serve the minestrone hot, perhaps with a sprinkling of grated Parmesan cheese and a drizzle of extra virgin olive oil.
