Ingredients
- Vegetable broth1 L
- Fresh spinach250 g
- Peeled tomatoes240 g
- New potatoes3 u (225 g)
- Garlic2 cloves
- Leek2 u (400 g)
- Bell pepper2 u (440 g)
- Extra virgin olive oil2 tablespoons
- Thymeto taste
- Bay leafto taste
Procedure
0. In a large saucepan, heat the olive oil over medium heat. Add the minced garlic and sliced leeks. Sauté for about 3-4 minutes until translucent.
1. Add the peppers and potatoes to the pot and stir well. Cook for another 5 minutes, stirring occasionally.
2. Add the peeled tomatoes to the pot and crush them lightly with a wooden spoon. Add the vegetable broth and bring to a boil. Reduce the heat, cover, and simmer for about 20 minutes, or until the potatoes are tender.
3. Add the chopped spinach in the last minute of cooking, allowing it to gently wilt in the hot broth.
4. Taste and season with salt and pepper, and add chopped herbs to taste. Serve the minestrone hot, perhaps with a sprinkling of grated Parmesan cheese and a drizzle of extra virgin olive oil.
