Ravioli fatti in casa, con sfoglia sottile e ripieno ricco: un abbraccio di sapori autentici, perfetti con burro e salvia o un sugo semplice. Tradizione italiana in ogni morso.
Ingredients
- Type 00 flour200 g
- Ground beef150 g
- Shallot50 g
- Parmigiano Reggiano DOP50 g
- Carrots50 g
- Eggs2 u (120 g)
- Garlic1 clove
- Sageto taste
- Fine saltto taste
- Bouillon cubeto taste
- Cornstarch (Maizena)to taste
- Butterto taste
- Black pepperto taste
Procedure
0. Place the flour in a mound and make a well in the center. Crack the eggs into the bowl and beat them roughly. Add the flour, stirring vigorously. Once the dough is smooth, cover with plastic wrap and let it rest for half an hour.
1. For the filling, cook the minced meat in a pan. Separately, make a broth by sautéing the shallot, garlic, and grated carrot in a knob of butter. Add a teaspoon of cornstarch and a teaspoon of granulated stock. Add a glass of water and stir. Once thickened, add the meat. Add another glass of water and cook for a few minutes. Then turn off the heat and stir in the grated Parmesan cheese. Let cool completely.
2. Roll out the dough using a rolling pin or a pasta machine. Then prepare the ravioli by placing the filling on one sheet of pasta, then layering another sheet on top. Use a ravioli cutter to shape the ravioli (alternatively, you can press the two layers together and cut with a pastry wheel or knife).
3. Cook in boiling salted water for 3-4 minutes. Then toss them in a pan with a knob of melted butter, sage, and pepper. Add half a ladle of cooking water and toss. Serve hot.
