Ecco una ricetta deliziosa per preparare delle crostatine di marmellata di albicocche con mandorle, perfette per un dolce dopo pasto o per accompagnare il tè.

  • 0. In a large bowl, combine the flour, powdered sugar, and salt. Add the cold butter and quickly work the mixture with your fingertips until it resembles sand. Make a well in the center and add the egg, egg yolk, and lemon zest.
  • 1. Knead quickly until it forms a smooth ball. If necessary, add a tablespoon of cold water to help bind the dough. Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 30 minutes.
  • 2. Preheat the oven to 180°C. Roll out the shortcrust pastry on a lightly floured surface until about 5 mm thick. Use a round pastry cutter to cut out discs of pastry and line the previously buttered and floured tart molds.
  • 3. Prick the bottom of the tartlets with a fork. Spread a generous layer of apricot jam on each pastry base. Sprinkle the chopped almonds over the jam. Decorate the tartlets with flaked almonds. Cover the tartlets with strips of shortcrust pastry.
  • 4. Bake the tartlets in the preheated oven for about 20-25 minutes, or until the pastry is golden brown. Let the tartlets cool in the molds before carefully unmolding them.
