Ingredients
- Almond flour300 g
- Type 00 flour300 g
- Dark chocolate300 g
- Butter300 g
- Granulated sugar300 g
- Eggs1 u (60 g)
- Fine saltto taste
Procedure
0. To prepare the baci di dama, start with the shortcrust pastry. In a bowl, vigorously mix the softened butter and sugar. Add the almond flour and mix well.
1. Pour the egg whites into a bowl, add the salt to dissolve. Pour everything into the batter. Once the fat is well combined, add the sifted flour.
2. Once the flour has been absorbed, transfer the dough to a lightly floured surface. Sprinkle a light layer of flour on top and bring it together without kneading. Wrap the dough in plastic wrap and refrigerate for 2-3 hours.
3. Once the dough has risen, transfer it to a lightly floured surface and roll it out until it is about 1 cm thick.
4. Trim the first edge, then cut 2 cm thick strips lengthwise using a ruler and knife. Create the lattice by cutting 2 cm wide strips in the other direction, creating cubes.
5. Round them in the palm of your hand and place them on a baking tray lined with baking paper, spacing them apart.
6. Bake in a preheated oven at 180°C (350°F) for 12 minutes. Once the cookies are golden brown, remove them from the oven and let them cool. Melt the chocolate and transfer it to a bowl. Dip the bases of the spheres into the chocolate and fold them together. Let them cool.
