  • 0. Make the dough: In a large bowl, combine the flour, active yeast, sugar, and salt. Add the warm water and olive oil. Mix well until smooth. Transfer the dough to a floured surface and knead for about 5-10 minutes, until soft and elastic. Place the dough in a lightly oiled bowl, cover with a clean cloth, and let rise in a warm place for about 1 hour, or until doubled in size.

Meanwhile, prepare the meat sauce: In a large bowl, combine the ground beef with the chopped onion, chopped tomatoes, hot green peppers (if using), minced garlic, tomato paste, lemon juice, olive oil, sweet paprika, red chili powder (if using), salt, and black pepper. Stir well until all the ingredients are combined.
  • 2. Once the dough has risen, divide the dough into smaller portions and roll each portion out on a floured surface, forming thin sheets.
  • 3. Preheat the oven to 220°C (425°F) and prepare one or more baking sheets, lightly greased with olive oil. Spread a thin layer of the meat sauce on each sheet of pasta, leaving a border around the edges.
  • 4. Transfer the prepared lahmacun to a baking sheet and bake in a preheated oven for about 10-12 minutes, or until the pastry is golden and crispy and the meat is cooked through. Once cooked, serve the lahmacun hot, perhaps accompanied by a fresh salad, lemon wedges, and Greek yogurt.
