  • 0. Preheat the oven to 200°C. Arrange the vegetables on a baking sheet, drizzle with oil, salt, and pepper. Bake for about 20-25 minutes, or until tender and slightly caramelized.
  • 1. Season the lamb chops with salt and pepper. Heat the oil in a skillet over medium-high heat. Add the lamb, rosemary, and garlic. Cook the chops for about 3 minutes per side for medium rare, or longer, depending on your desired doneness.
  • 2. In the last few minutes, add the butter to the pan and spoon the melted butter and herbs over the ribs to further flavor them. Remove the ribs from the pan and let them rest.
  • 3. Drain the excess fat from the pan, retaining the flavors and juices. Add the wine and reduce over medium-high heat for a few minutes, scraping up any cooking residue on the bottom of the pan. Add the beef broth and tomato paste. Reduce the sauce until slightly thickened and flavorful.
  • 4. Serve the lamb chops with the roasted vegetables. Baste the chops with the cooking juices and garnish with a sprig of fresh rosemary.
