  • 0. For the dough: Place the flour (400 g) in a mound, make a well in the center, and crack in the eggs. Beat them roughly and begin kneading vigorously. Once you have a smooth dough, wrap it in plastic wrap and let it rest for half an hour.
  • 1. For the ragù: Finely chop the vegetables and sauté them in a drizzle of extra virgin olive oil. In another pan, cook the pancetta and ground beef (without adding oil) to seal the meat with the Maillard reaction. Add the browned meat to the soffritto along with the passata, salt, and pepper. Add two bay leaves and cook (at least 20 minutes - ideally 3 hours).
  • 2. For the béchamel sauce: Melt the butter in a saucepan and add 50 grams of flour. Let it brown for a few minutes. Meanwhile, heat the milk. Add the hot milk little by little until fully incorporated. Season with ground nutmeg and pepper.
  • 3. Roll out the dough using a pasta machine or rolling pin and create your sheets. Now it's time to assemble. Start with a layer of béchamel, then add the ragù and the pasta. Continue this process until you reach the desired thickness. Finish with a thicker layer of béchamel, topping everything with grated cheese.
  • 4. Bake in a preheated oven at 220°C (425°F) for 20 minutes. Wait 10 minutes before serving.
