Ingredients
- Carnaroli rice200 g
- Red beets60 g
- White onion30 g
- Lemon4 u (340 g)
- Poppy seedsto taste
- Fresh mintto taste
- Extra virgin olive oilto taste
- Bouillon cubeto taste
Procedure
0. In a large skillet, sauté the sliced onion in olive oil. Add a little water and let the onion soften. Add the rice and sauté.
1. Continue cooking, gradually adding vegetable stock made with a stock cube and lemon juice. I had four medium-sized ones.
2. Continue cooking until the rice is al dente. Pour into a serving dish and garnish with chopped fresh mint leaves, a sprinkle of poppy seeds, and a dash of black pepper. I also had some sliced beetroot, so I added that. The sweet flavor of the beetroot pairs well with the tartness of the lemon.
