- Whole milk500 ml
- Durum wheat pasta350 g
- Ground beef200 g
- Cheddar150 g
- Cooking cream100 ml
- Golden onion50 g
- Provola (or Provolone)50 g
- Corn flour30 g
- Parmigiano Reggiano DOP30 g
- Butter30 g
- Garlic1 clove
- Extra virgin olive oil1 tablespoon
- Black pepperto taste
- Nutmegto taste
- Fine saltto taste
- Smoked paprikato taste
Procedure
0. Bring a pot of salted water to a boil and cook the penne rigate for 1-2 minutes less than the package directions (they'll finish cooking in the sauce). Drain and toss with a drizzle of oil to prevent sticking.
1. Heat 1 tablespoon butter and 1 tablespoon oil in a large skillet. Add the chopped onion and garlic, sautéing over medium heat until golden. Add the ground beef and cook, stirring, until well browned. Add the smoked paprika, mustard powder, salt, and pepper. Let it simmer for a couple of minutes, then turn off the heat and set aside.
2. In a saucepan, melt 30g of butter over medium heat. Add the cornflour and whisk to create a golden roux (about 1 minute). Slowly pour in the milk and cream, stirring constantly to avoid lumps. Add the nutmeg and cook until the sauce thickens slightly. Remove from the heat and stir in the grated cheeses (cheddar, gruyere, and parmesan), stirring until completely melted. 💡 Tip: For an even smoother sauce, blend it with an immersion blender for a few seconds!
3. Add the browned ground beef to the cheese sauce and mix well. Pour in the penne rigate, stirring to coat them completely in the cream cheese. For an extra touch, transfer everything to a baking dish and sprinkle with the breadcrumb, Parmesan, and melted butter mixture. Bake at 200°C (390°F) for 10 minutes or until golden and crispy.
