  • 0. Fill the gourd about 1/3 full with yerba mate. Tilt the gourd slightly (about 45 degrees) so that the leaves pile up on one side, creating a sort of "slope" inside. Make sure the leaves are not pressed too tightly together, so as to allow for good water circulation.
  • 1. Pour hot water (not boiling, but between 70-80°C) onto the underside of the gourd, where the leaves are tallest. Let the water absorb slowly. This process allows the mate leaves to "relax" and prepare them for infusion. Let steep for a couple of minutes.
  • 2. Insert the bombilla (the metal straw with a filter) into the soaked portion of the yerba mate, being careful not to mix the leaves. The bombilla serves to filter the leaves, preventing them from getting into your drink.
  • 3. Sip the mate directly from the bombilla. The first mate you drink may be stronger and more concentrated, while subsequent ones will be milder. If you like, you can add sugar, honey, or a little lemon to customize the flavor.
  • 4. Once the mate becomes too "light" or "bitter," you can refill the gourd with hot water, keeping the mate always ready for the next sip. Generally, you can refill the yerba mate up to 4-5 times before it loses too much flavor.
  • 5. Mate is traditionally shared among friends or family. Once you've drunk your portion, pass the gourd to the next member of the group, who then adds hot water and drinks their mate. The ritual is repeated until everyone is satisfied.
