- Potato gnocchi500 g
- Pak Choi200 g
- Walnuts50 g
- Salted ricotta50 g
- Garlic1 clove
- Fine saltto taste
- Black pepperto taste
- Extra virgin olive oilto taste
Procedure
0. Wash the pak choy thoroughly, separate the leaves from the stalks, and chop both into pieces. The stalks require a slightly longer cooking time, so it may be helpful to cook them separately or start before adding the leaves.
1. In a large skillet, heat a drizzle of extra virgin olive oil and add the garlic cloves. Let the garlic brown, then add the pak choi stalks and cook for about 3-4 minutes. Add the pak choi leaves and cook for another 2-3 minutes, until wilted. Season with salt and pepper to taste.
2. Bring a pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, indicating they're done. This usually takes about 2-3 minutes. Drain the gnocchi, reserving a little of the cooking water.
3. Add the gnocchi to the pan with the pak choi. If necessary, add a little of the gnocchi cooking water to create a light emulsion and make the dish creamier. Stir gently to coat the gnocchi with the pak choi and garlic.
4. Transfer the gnocchi to serving plates. Sprinkle with grated ricotta salata and chopped walnuts. Serve immediately, drizzling with a final drizzle of olive oil if desired.
