  • 0. Wash the pak choy thoroughly, separate the leaves from the stalks, and chop both into pieces. The stalks require a slightly longer cooking time, so it may be helpful to cook them separately or start before adding the leaves.
  • 1. In a large skillet, heat a drizzle of extra virgin olive oil and add the garlic cloves. Let the garlic brown, then add the pak choi stalks and cook for about 3-4 minutes. Add the pak choi leaves and cook for another 2-3 minutes, until wilted. Season with salt and pepper to taste.
  • 2. Bring a pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, indicating they're done. This usually takes about 2-3 minutes. Drain the gnocchi, reserving a little of the cooking water.
  • 3. Add the gnocchi to the pan with the pak choi. If necessary, add a little of the gnocchi cooking water to create a light emulsion and make the dish creamier. Stir gently to coat the gnocchi with the pak choi and garlic.
  • 4. Transfer the gnocchi to serving plates. Sprinkle with grated ricotta salata and chopped walnuts. Serve immediately, drizzling with a final drizzle of olive oil if desired.
