Arrosto di Maiale in Padella alla Lavanda

Ingredients
- Pork loin400 g
- White wine100 ml
- Vegetable broth100 ml
- Shallot4 u (160 g)
- Extra virgin olive oil2 tablespoons
- Garlic1 clove
- Dried lavenderto taste
- Black pepperto taste
- Fine saltto taste
Procedure
0. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Season the roast with salt and pepper and sear on all sides, about 3-4 minutes per side, until golden brown. Remove the roast from the pan and reduce the heat to medium.
1. Add the remaining tablespoon of oil, the shallots, and the garlic; sauté gently for 2-3 minutes until they begin to brown. Return the roast to the pan, add the lavender, and deglaze with the white wine. Let the alcohol evaporate over medium heat for 2 minutes. If desired, add broth to keep the roast moist, and reduce the heat to low.
2. Cover the pan with a lid and cook for about 20-25 minutes, turning the roast halfway through, until the meat is tender and cooked through (use a cooking thermometer to reach about 160°F at the core). Remove the lid during the last 5 minutes to allow the juices to reduce. Let the roast rest for a few minutes before slicing and serving with the shallots.
3. The lavender should be used sparingly so as not to become too aromatic. If you prefer a thicker sauce, you can remove the roast and reduce the sauce over high heat.
