La pasta all'arrabbiata è un piatto classico della cucina romana, noto per il suo sapore piccante e semplice.
Ingredients
- Peeled tomatoes400 g
- Durum wheat pasta320 g
- Extra virgin olive oil2 tablespoons
- Garlic2 cloves
- Parsleyto taste
- Basilto taste
- Fine saltto taste
- Chili pepperto taste
Procedure
0. Heat the oil in a large skillet. Add the garlic and chili pepper. Sauté over medium-low heat until the garlic turns golden. Be careful not to burn it. Add the peeled tomatoes. If using fresh tomatoes, peel them, remove the seeds, and dice them before adding them. Crush the tomatoes in the skillet to break them up more easily.
1. Cook over medium heat for about 15-20 minutes, or until the sauce thickens. Add salt to taste.
2. While the sauce is cooking, bring a pot of salted water to a boil. Cook the pasta according to the package directions until al dente. Drain the pasta, reserving a little of the cooking water.
3. Add the pasta to the tomato sauce in the pan. Stir well to combine, adding a little of the reserved cooking water if necessary to make the sauce creamier. If desired, add the chopped parsley and stir for another minute.
