- Durum wheat pasta320 g
- Chickpea flour100 g
- Zucchini2 u (400 g)
- Tarragon1 teaspoon
- Extra virgin olive oil1 tablespoon
- Poppy seedsto taste
- Fine saltto taste
- Black pepperto taste
Procedure
0. Wash the zucchini and dice them finely. Heat the extra virgin olive oil in a pan and add the diced zucchini. Cook over medium-high heat for about 7-8 minutes, until golden and tender. Season with salt, pepper, tarragon, and poppy seeds. Set aside.
1. Pour the chickpea flour into a bowl and gradually add the water or warm vegetable broth, stirring constantly to avoid lumps. Place over low heat and cook, stirring, until the mixture becomes smooth and thick (about 5-7 minutes).
2. Bring a pot of salted water to a boil and cook the pasta according to the package instructions. Drain al dente, reserving a little of the cooking water.
3. Add the pasta to the pan with the zucchini and add the chickpea cream (either the one made with flour or pre-cooked chickpeas). Mix well, adding a little of the pasta cooking water if necessary to make it creamier.
