Pasta alla zozzona cremosa e ricca, con pancetta, pomodoro e formaggi. Un primo piatto gustoso e avvolgente, perfetto per gli amanti dei sapori decisi.

  • 0. To make the pasta alla zozzona, first finely chop the onion and sauté it gently in a saucepan with the oil. Once it's translucent, add the sausage, removed from its casing and separated into small pieces, along with the guanciale. Sauté until the sausage changes color.
  • 1. Add the canned cherry tomatoes, season with salt and pepper, and reduce the sauce, covered, for about 15-20 minutes. Meanwhile, in a bowl, whisk the egg yolks with a pinch of salt, a pinch of pepper, and the grated pecorino. You should obtain a thick cream.
  • 2. Cook the pasta, drain it al dente, and add it to the pan with the sauce. Remove from the heat, stir in the egg yolk mixture, stirring in a little of the rigatoni cooking water if necessary. Toss and transfer to serving plates. Serve the pasta alla zozzona with additional grated Pecorino Romano, if desired.
