Le patate vastase sono una pietanza tipica della cucina trapanese. Una ricetta semplicissima, sfiziosa e filante per gustare un ricco piatto di patate al forno.
Ingredients
- Yellow potatoes500 g
- Cherry tomato300 g
- Mozzarella125 g
- White onion100 g
- Dried oreganoto taste
- Black pepperto taste
- Extra virgin olive oilto taste
- Fine saltto taste
Procedure
0. To prepare the vastase potatoes, peel, wash, dry, and cut them into medium-thin slices. Add the potatoes and the sliced onion to a baking dish greased with olive oil. Toss to combine.
1. Add the halved cherry tomatoes and season with more oil, salt, pepper, and dried oregano. Stir and bake in a preheated oven at 200°C (400°F) for about 25-30 minutes. Add the shredded mozzarella, drained of its whey, and continue cooking for another 10 minutes, or until completely melted.
2. Remove the vastase potatoes from the oven, let them settle for a few minutes and serve them while they are still hot and the mozzarella is stringy.
