  • 0. To prepare the vastase potatoes, peel, wash, dry, and cut them into medium-thin slices. Add the potatoes and the sliced onion to a baking dish greased with olive oil. Toss to combine.
  • 1. Add the halved cherry tomatoes and season with more oil, salt, pepper, and dried oregano. Stir and bake in a preheated oven at 200°C (400°F) for about 25-30 minutes. Add the shredded mozzarella, drained of its whey, and continue cooking for another 10 minutes, or until completely melted.
  • 2. Remove the vastase potatoes from the oven, let them settle for a few minutes and serve them while they are still hot and the mozzarella is stringy.
