  • 0. Preheat the oven to 180°C and line a cake pan with parchment paper or grease and lightly flour it. In a large bowl, combine the flour, brown sugar, baking soda, baking powder, cinnamon, nutmeg (if using), and salt.
  • 1. Add the coconut oil (or sunflower oil) and plant-based milk to the dry ingredients and mix well until smooth. Pour half the batter into the prepared pan and evenly distribute the pear slices on top.
  • 2. Pour the remaining batter over the pears, smoothing the surface with a spatula. Arrange a few pear slices on top of the batter for decoration, if desired.
  • 3. Bake the cake in the preheated oven for about 40-45 minutes, or until a toothpick inserted into the center comes out clean. Once baked, let the cake cool in the pan for a few minutes, then transfer it to a wire rack to cool completely.
  • 4. Once cooled, cut the pear cake into slices and serve. You can dust it with a little powdered sugar if you like.
