Ingredients
- Almond milk240 ml
- Type 00 flour180 g
- Brown sugar100 g
- Sunflower oil60 g
- Abate pears2 u (400 g)
- Baking soda1 teaspoon
- Baking powder1 teaspoon
- Ground cinnamon1 teaspoon
- Fine saltto taste
- Nutmegto taste
Procedure
0. Preheat the oven to 180°C and line a cake pan with parchment paper or grease and lightly flour it. In a large bowl, combine the flour, brown sugar, baking soda, baking powder, cinnamon, nutmeg (if using), and salt.
1. Add the coconut oil (or sunflower oil) and plant-based milk to the dry ingredients and mix well until smooth. Pour half the batter into the prepared pan and evenly distribute the pear slices on top.
2. Pour the remaining batter over the pears, smoothing the surface with a spatula. Arrange a few pear slices on top of the batter for decoration, if desired.
3. Bake the cake in the preheated oven for about 40-45 minutes, or until a toothpick inserted into the center comes out clean. Once baked, let the cake cool in the pan for a few minutes, then transfer it to a wire rack to cool completely.
4. Once cooled, cut the pear cake into slices and serve. You can dust it with a little powdered sugar if you like.
