Questa galette è un dessert rustico e versatile che può essere preparato con diversi tipi di frutta. L'aggiunta di rosmarino e noci dona un tocco aromatico e croccante, ma puoi omettere o sostituire questi ingredienti in base ai tuoi gusti. La panna montata o il gelato bilanciano perfettamente la dolcezza delle pere e la croccantezza della crosta.

  • 0. In a bowl, mix together the flour, salt and sugar. Add the cold butter and work it with your fingertips or a mixer until the mixture resembles sand.
  • 1. Add the cold water little by little and knead until it forms a smooth dough. Do not overwork the dough. Wrap the dough in cling film and let it rest in the refrigerator for at least 30 minutes.
  • 2. Preheat the oven to 180°C. Cut the pears into slices about 1 cm thick and place them in a bowl with the lemon juice, brown sugar, cinnamon and vanilla. Mix gently. Roll out the dough on a floured surface until it is about 3-4 mm thick. Transfer it to a baking sheet lined with baking paper.
  • 3. Arrange the pear slices in the center of the pastry, leaving a free edge of about 5 cm. Sprinkle the pears with the chopped walnuts and, if desired, with a few needles of rosemary. Fold the edges of the pastry towards the center, leaving the filling exposed. Brush the edges of the pastry with melted butter.
  • 4. Bake in the preheated oven for 35-40 minutes, or until the crust is golden and crispy and the pears are soft. Once baked, let the galette cool slightly before serving.
  • 5. Serve the galette warm with a dollop of fresh whipped cream or a scoop of vanilla ice cream. Garnish with a few fresh basil leaves, if desired.
