Un primo piatto semplice e irresistibile: pasta con pomodorini dolci, olive nere, cipolla rossa e un tocco di aglio rosolato in olio extravergine d’oliva. Ingredients
- Cherry tomato200 g
- Durum wheat pasta180 g
- Red onion30 g
- Taggiasca olives30 g
- Extra virgin olive oil2 tablespoons
- Garlic1 clove
- Fine saltto taste
- Parsleyto taste
- Parmigiano Reggiano DOPto taste
Procedure
0. Wash the cherry tomatoes and cut them in half. Thinly slice the red onion. Crush the garlic clove (you can leave it whole or minced for a more intense flavor). Slice the olives, if whole.
1. In a large pan, heat the extra virgin olive oil and sauté the garlic and onion for 2-3 minutes over medium-low heat, until the onion softens.
2. Pour the cherry tomatoes into the pan, season with salt and pepper, and cook for 7-8 minutes, until they begin to fall apart and create a sauce.
3. Add the olives and cook for another 2 minutes.
4. Meanwhile, cook the pasta in plenty of salted water. Drain al dente, reserving a cup of the cooking water.
5. Pour the pasta into the pan with the sauce. Stir well over high heat for 1-2 minutes, adding a little of the cooking water if needed.
6. Serve immediately with a generous sprinkling of grated Parmesan and, if you like, a sprinkling of parsley or oregano.
