  • 0. Wash the peppers, remove the stems, seeds, and internal filaments, and cut them into strips about 1-2 cm wide.
  • 1. In a large pot, bring the water and vinegar to a boil with a pinch of coarse salt. Add the pepper strips and cook for 4-5 minutes, keeping them crispy. Drain and spread the peppers on a clean kitchen towel, patting them dry. Let them dry for 24 hours in a dry, ventilated place.
  • 2. Sterilize jars and lids by boiling them in water for at least 10 minutes. Dry them completely before use.
  • 3. Arrange a layer of peppers in the jar, add a few garlic slices, a small piece of chili pepper, a basil leaf, and a sprinkling of oregano. Repeat the layers until the jar is full, leaving about 1 cm from the top. Cover completely with extra virgin olive oil, making sure there are no air bubbles. Seal the jars tightly.
  • 4. Store the jars in a cool, dark place for at least 7 days before consuming, to allow the flavors to blend.
