Ingredients
- Pistachios80 g
- Dried tomatoes60 g
- Parmigiano Reggiano DOP30 g
- Extra virgin olive oil6 tablespoons
- Dried oregano1 teaspoon
- Garlic1 clove
- Basilto taste
- Black pepperto taste
Procedure
0. Grinding the pistachios: Start by grinding the pistachios in a mortar and pestle using firm, circular motions. You should obtain fine, but not completely pulverized, grains.
1. Adding the sun-dried tomatoes: Add the chopped sun-dried tomatoes and continue to blend until you obtain a smooth paste.
2. Adding the basil and garlic: Add the torn basil leaves and, if using, the finely minced garlic. Process until fragrant.
3. Parmesan and herbs: Combine the grated Parmesan (or nutritional yeast), oregano, and a little black pepper, mixing with the pestle.
4. Emulsifying with oil: Gradually pour in the oil, continuing to work the mixture until you obtain a creamy pesto with a rustic texture.
