Ingredients

Procedure

  • 0. Rinse the Venere rice under running water. Put the rice in a pot with the water and a pinch of salt. Bring to a boil, then lower the heat and let it cook for about 35-40 minutes, or until the rice is cooked and has absorbed all the water. Once cooked, let it cool to room temperature.
  • 1. Cut the red cabbage into thin strips and the cucumber into slices or strips. In a saucepan, bring the rice vinegar (or apple cider vinegar), water, sugar and a pinch of salt to a boil.
  • 2. Once the solution boils, remove from heat and add the red cabbage and cucumber. Let the vegetables sit in the solution for at least 15-20 minutes. This will give them a sweet and sour flavor and a light marinade.
  • 3. If the salmon is frozen, cut it into 2cm cubes and set aside. If it is not frozen, cut it into cubes and sear in a pan with a tablespoon of olive oil for about 1-2 minutes per side, until golden on the outside but still pink in the center. Season with salt and pepper.
  • 4. Cut the avocado in half, remove the pit and slice thinly. Dice the mango. In each bowl, distribute the venere rice as a base. Add the salmon (raw or seared) on one side. Arrange the avocado slices, mango cubes, marinated red cabbage and marinated cucumbers evenly around the rice.
  • 5. Garnish with sesame seeds, if desired. Drizzle with soy sauce or tamari and a little lime juice, if desired.
