Ingredients
- Pork loin400 g
- Coconut milk400 ml
- Spring onion200 g
- Corn (precooked)175 g
- Peanut butter20 g
- Soy sauce10 ml
- Brown sugar5 g
- Lime1 u (50 g)
- Extra virgin olive oilto taste
- Fine saltto taste
- Curryto taste
Procedure
0. Start by heating the oil in a wok or a high-sided pan. Add the spring onions and cilantro stems and cook for 1 minute. Add the pork slices and continue cooking for 5 minutes, until they begin to brown.
1. In a bowl, combine the curry powder and peanut butter. Add the sugar, coconut milk, and half a cup of water. Mix well and add to the meat. Cover and simmer for 15 minutes, stirring occasionally.
2. Remove the lid, add the corn, and increase the heat. Simmer for 3 minutes, until the corn is cooked and the sauce has thickened slightly. Add the lime juice and season with salt.
