Ingredients
- Yellow potatoes900 g
- Type 0 flour675 g
- Beef broth600 ml
- Pork loin450 g
- Golden apples400 g
- White onion300 g
- Water300 ml
- Butter180 g
- Tomato paste50 g
- Extra virgin olive oil30 ml
- Garlic4 cloves
- Eggs1 u (60 g)
- Black pepperto taste
- Sageto taste
- Fine saltto taste
Procedure
0. Start with the filling. Peel and wash the potatoes. Then cut them into slices and cook them in boiling salted water for 10 minutes. In a tall pan, melt the butter and oil and brown the pork until golden brown.
1. Add the sliced onions and crushed garlic and cook, stirring frequently, for 5 minutes. Season with a pinch of salt and pepper. Reduce the heat, add the broth, and cook for 1.5 hours. Cook until the broth is completely absorbed. Let cool.
2. Preheat the oven to 200°C. Sift the flour and salt. Melt the butter with the water and bring to a boil. Slowly add the liquid to the flour until absorbed. Knead the dough until smooth. Set aside a quarter of the dough and roll out the remaining dough into a greased (or parchment-lined) baking pan, deep enough to accommodate the contents (about 20 cm in diameter).
3. Peel and slice the apples. Layer the chicken, potatoes, and apples inside the pastry. Cover with the remaining pastry and seal the sides. For a golden brown finish, brush the surface with beaten egg. Using a toothpick, make a small hole in the center. Bake for about 30 minutes. Then reduce the temperature to 160°C and bake for another 45 minutes. Serve warm.
