  • 0. Start with the filling. Peel and wash the potatoes. Then cut them into slices and cook them in boiling salted water for 10 minutes. In a tall pan, melt the butter and oil and brown the pork until golden brown.
  • 1. Add the sliced onions and crushed garlic and cook, stirring frequently, for 5 minutes. Season with a pinch of salt and pepper. Reduce the heat, add the broth, and cook for 1.5 hours. Cook until the broth is completely absorbed. Let cool.
  • 2. Preheat the oven to 200°C. Sift the flour and salt. Melt the butter with the water and bring to a boil. Slowly add the liquid to the flour until absorbed. Knead the dough until smooth. Set aside a quarter of the dough and roll out the remaining dough into a greased (or parchment-lined) baking pan, deep enough to accommodate the contents (about 20 cm in diameter).
  • 3. Peel and slice the apples. Layer the chicken, potatoes, and apples inside the pastry. Cover with the remaining pastry and seal the sides. For a golden brown finish, brush the surface with beaten egg. Using a toothpick, make a small hole in the center. Bake for about 30 minutes. Then reduce the temperature to 160°C and bake for another 45 minutes. Serve warm.
