  • 0. Dissolve the yeast in the warm water and sugar. Let it sit for 5 minutes until frothy. In a large bowl, combine the flour, salt, and baking powder. Add the water and yeast, then the oil.
  • 1. Knead until the dough is smooth and elastic, about 10 minutes. Cover with a damp cloth and let rise in a warm place for 1-2 hours, or until doubled in size.
  • 2. In a pan, cook the ground pork until golden brown. Add the green onion, garlic, ginger, soy sauce, sesame oil, sugar, salt, and pepper. Cook until everything is cooked through and the flavors have blended. Let cool.
  • 3. After rising, roll out the dough on a lightly floured surface and divide it into small balls (about 20). Roll each ball into a disc, keeping the center slightly thicker than the edges. Place a spoonful of filling in the center of each disc. Pinch the edges together to seal the bao.
  • 4. Prepare a steamer by lining the bottom with perforated parchment paper or cabbage leaves to prevent the bao from sticking. Leave space between the bao because they will puff up during cooking. Steam for about 15 minutes, or until puffed and soft.
  • 5. Serve the bao hot straight from the steamer. They're delicious on their own or with additional dipping sauces like hoisin or soy sauce.
