  • 0. Bring some salted water to a boil. Then boil the asparagus for about ten minutes.
  • 1. In a non-stick pan, add a knob of butter, a pinch of pepper and a sprig of rosemary.
  • 2. Sear the meat on both sides, then deglaze with white wine. Reduce the heat and continue cooking, covered, for a few minutes. This will take about 7 minutes for a 3cm thick piece of meat.
  • 3. Once the meat is cooked, let it rest for 10 minutes. Meanwhile, sauté the asparagus with a drizzle of extra virgin olive oil and some cherry tomatoes. Serve together.
