Ingredients
- Vegetable broth1.5 L
- Sausage meat300 g
- Rice noodles200 g
- Spring onion25 g
- Garlic3 cloves
- Soy sauce2 tablespoons
- Golden onion1 u (150 g)
- Ginger1 tablespoon
- Black pepper1 teaspoon
- Cornstarch (Maizena)1 tablespoon
- Sesame oil1 teaspoon
- Soybean sproutsto taste
- Corianderto taste
- Star aniseto taste
- Chili pepperto taste
- Fine saltto taste
Procedure
0. In a large pot, bring the broth to a boil. Add the onion, garlic, ginger, star anise, and black pepper. Simmer for at least 30-40 minutes, partially covering the pot.
1. Add the soy sauce and, if desired, the fish sauce. Season with salt and strain the broth to obtain a clear liquid.
2. In a bowl, mix the minced meat with the spring onion, grated ginger, garlic, soy sauce, sesame oil, cornstarch, salt, and pepper.
3. Work the mixture with your hands until smooth. With slightly damp hands, form meatballs about 2-3 cm in diameter.
4. Bring a pot of water to a boil and cook the meatballs for 5-6 minutes, until cooked through and firm. Drain and set aside.
5. Cook the noodles according to the package instructions, draining them slightly al dente. Divide the noodles among serving bowls. Add the pork meatballs on top. Pour the strained hot broth over the noodles and meatballs.
6. Garnish with bean sprouts, fresh spring onion, coriander, and, if desired, fresh chili pepper slices.
