Procedure
0. In a large bowl, prepare the marinade by whisking together the olive oil, balsamic vinegar, minced garlic, rosemary, oregano, chili pepper, thyme, sage, salt, and pepper.
1. Take the ribs and, using a knife, make cuts between the bones to allow the marinade to penetrate better. Place the ribs in the marinade and massage well to evenly distribute the spices.
2. Cover the bowl with cling film and leave to marinate in the refrigerator for at least 2 hours, but ideally overnight, to intensify the flavours.
3. Preheat the oven to 180°C. Take a sheet of parchment paper or aluminum foil large enough to completely wrap the ribs. Place the ribs in the center and close the parcel tightly, sealing it so that the juices don't escape during cooking.
4. Place the parcel in a baking dish and bake for about an hour and a half. Slow cooking in the parcel will help the meat become tender and succulent.
5. After an hour and a half, open the foil and place the ribs under the oven's broiler, set to high. Cook for about 30 minutes, turning the ribs every 10 minutes to brown them evenly. The heat from the broiler will caramelize the meat and form a crispy crust.
6. When the ribs are golden brown and crispy, remove them from the oven and let them rest for a few minutes.
