Gnocchi di patate morbidi e delicati, un classico della cucina italiana, perfetti con sughi semplici o ricchi per un comfort food irresistibile.
Ingredients
- Red potatoes1 Kg
- Type 00 flour250 g
- Eggs1 u (60 g)
- Nutmegto taste
- Fine saltto taste
- Black pepperto taste
Procedure
0. Boil the red potatoes (the traditional recipe calls for old potatoes) in cold, salted water. Peel them while still warm and mash them with a potato ricer, letting them fall onto a floured surface.
1. Gradually add the remaining flour, the egg, and season. Knead quickly. Divide the dough into slices about 2 cm thick, then cut them into long cylinders 2 cm in diameter. Cut into 2 cm pieces, forming small gnocchi. Using a fork or a ridged board, shape them into their typical shape.
2. Cook in boiling salted water and drain when they float. Season to taste and serve.
