- Shortcrust pastry230 g
- Agretti (Monk's beard)200 g
- Cooking cream150 ml
- Mozzarella100 g
- Parmigiano Reggiano DOP50 g
- Eggs3 u (180 g)
- Garlic1 clove
- Black pepperto taste
- Fine saltto taste
- Lemon zestto taste
Procedure
0. After removing the soil, rinse the agretti thoroughly and sauté them in a pan with a drizzle of oil and a clove of garlic for 2-3 minutes, just long enough to soften them slightly. Remove the garlic and let cool.
1. Roll out the shortcrust pastry in a cake pan lined with baking paper, prick the bottom with a fork, and refrigerate it while you prepare the filling.
2. In a bowl, whisk the eggs with the cream, a pinch of salt, and pepper. Add the warmed agretti and diced mozzarella, stirring well to combine the flavors.
3. Pour the mixture into the shortcrust pastry base and smooth it out with a spatula. Sprinkle the surface with grated Parmesan cheese and a generous grating of lemon zest, which will add freshness and an irresistible aroma.
4. Bake in a preheated static oven at 180°C for about 35-40 minutes, until the surface is golden and the filling is well set.

5. Let the quiche cool for a few minutes before slicing. It's perfect both warm and at room temperature, perhaps accompanied by a fresh salad.
