Ingredients
- Parboiled rice360 g
- Tuna in oil240 g
- Frozen peas150 g
- Corn (precooked)125 g
- Cherry tomato125 g
- Extra virgin olive oil2 tablespoons
- Lemon1 u (85 g)
- Red onionto taste
- Black pepperto taste
- Fine saltto taste
- Basilto taste
Procedure
0. Cook the rice in plenty of salted water according to the package instructions (usually 12-15 minutes). Once cooked, drain and rinse under cold water to stop the cooking process. Let it cool completely.
1. If using fresh peas, cook them in boiling salted water for about 5-7 minutes, then drain and refresh under cold water. If using frozen peas, follow the package instructions.
2. Wash the cherry tomatoes and cut them in half or quarters, depending on their size. Peel and finely slice the red onion (if using). Drain the tuna from the oil or preserving liquid and crumble it with a fork.
3. In a large bowl, combine the cooled rice, cherry tomatoes, peas, red onion, and tuna. Drizzle with extra virgin olive oil, salt, and pepper to taste. Add lemon juice for a touch of acidity. Mix all the ingredients well to distribute the seasoning evenly.
4. Let the rice salad rest in the refrigerator for at least 30 minutes before serving, so that the flavors can meld together. Before serving, you can garnish with a few fresh basil leaves.
