Ingredients
- Pork loin1 Kg
- Apple juice300 ml
- Mustard (sauce)30 g
- Cornstarch (Maizena)15 g
- Black pepperto taste
- Fine saltto taste
Procedure
0. Preheat the oven to 200°C. Make sure the loin skin is cut in the classic diagonal braided pattern. Then rub the meat with salt and pepper. Bake for 30-40 minutes until golden brown.
1. Remove the meat from the oven and reduce the temperature to 190°C. Mix the meat juices with the mustard and season the meat, spreading the mixture evenly with a spoon. Bake the meat for 50-60 minutes until golden brown.
2. Remove the meat from the oven and let it rest for 15 minutes before carving.
3. To make the accompanying sauce, we'll use the cooking juices. In a small saucepan, combine the cornstarch with the cooking juices, stirring over low heat. Cook for 2-3 minutes, then gradually add the apple juice to incorporate. Once the mixture has reached the desired consistency, remove from the heat.
4. Slice the pork loin and serve on a serving platter with the cream.
