  • 0. Rustic zucchini cutting • Wash the zucchini thoroughly and dry them. • Cut them roughly into thick sticks (about 1.5 cm), without worrying too much about the shape. They should be rustic and plump.
  • 1. Sauté over high heat • Heat a large pan (preferably non-stick or cast iron) over high heat. • Once hot, add the extra virgin olive oil.
  • 2. After 10 seconds, immediately add the zucchini, without stirring too much. Let them brown for about 2 minutes without turning them, so they brown.
  • 3. Then, sauté or stir with a spatula to brown the other sides as well.
  • 4. After about 6-7 minutes of cooking in total, when they are golden on the outside but still slightly crunchy inside: • Add the salt • Sprinkle with the dried oregano • Immediately after, a pinch of dried lavender (be careful not to overdo it: it has a very intense aroma!)
  • 5. Finishing and serving • Sauté for another 30 seconds to release the aromas. • Serve immediately, hot or warm.
