Un piatto sano e bilanciato con salmone fresco, verdure croccanti e riso profumato: gusto, leggerezza e benessere in ogni boccone!
Ingredients
- Vegetable broth500 ml
- Salmon400 g
- Fresh spinach200 g
- Carnaroli rice180 glasses
- Garlic1 clove
- Extra virgin olive oilto taste
- Black pepperto taste
- Rosemaryto taste
- Parsleyto taste
- Fine saltto taste
- Butterto taste
Procedure
0. Bring the vegetable broth to a boil. In a large skillet, heat a little oil and toast the rice for a couple of minutes. Add a ladle of hot broth and continue cooking the rice, gradually adding more broth, until it's cooked through (about 15-18 minutes).
1. Once cooked, you can stir in a knob of butter and a spoonful of grated cheese to make the rice creamier.
2. Rinse the spinach and drain well. In a pan, heat a drizzle of oil with the crushed garlic clove. Add the spinach and sauté for a few minutes until wilted. Season with salt and pepper to taste and remove the garlic before serving.
3. Season the salmon fillets with salt, pepper, and herbs to taste (you can use parsley or dill). Heat a nonstick pan with a drizzle of oil. Cook the salmon for about 4-5 minutes per side, starting with the skin-side down if present. Cooking time may vary depending on the thickness of the fillets.
4. Once the rice is ready and the spinach is sautéed, plate everything. Arrange a salmon fillet on each plate, add the spinach on the side, and serve with a portion of rice.
5. You can add a little grated lemon zest to the salmon for a fresh touch. For a creamier touch to the rice, you can replace part of the broth with a little cooking cream.
