  • 0. Toast the durum wheat breadcrumbs over very low heat. Sauté the chopped onion, garlic clove, and bay leaf in olive oil.
  • 1. Add the blanched raisins and pine nuts. Combine the breadcrumbs, parsley, and onion with the orange and lemon juice and zest.
  • 2. Soften with extra virgin olive oil and season with salt and pepper. Open the sardines like a book, fill them with the dressing, and roll them up so that the tails are at the top.
  • 3. In a baking dish, alternate the sardine fillets with bay leaves and orange slices. Dust with breadcrumbs, drizzle with oil, and bake for 8-10 minutes at 170°C.
