Ingredients
- Sardine500 g
- Breadcrumbs60 g
- Spring onion50 g
- Oranges50 g
- Lemon1 u (85 g)
- Garlic1 clove
- Fine saltto taste
- Black pepperto taste
- Raisinsto taste
- Extra virgin olive oilto taste
- Bay leafto taste
- Pine nutsto taste
- Anchovies in oilto taste
Procedure
0. Toast the durum wheat breadcrumbs over very low heat. Sauté the chopped onion, garlic clove, and bay leaf in olive oil.
1. Add the blanched raisins and pine nuts. Combine the breadcrumbs, parsley, and onion with the orange and lemon juice and zest.
2. Soften with extra virgin olive oil and season with salt and pepper. Open the sardines like a book, fill them with the dressing, and roll them up so that the tails are at the top.
3. In a baking dish, alternate the sardine fillets with bay leaves and orange slices. Dust with breadcrumbs, drizzle with oil, and bake for 8-10 minutes at 170°C.
