Ingredients
- Cherry tomato200 g
- Extra virgin olive oil2 tablespoons
- Eggplants2 u (500 g)
- Chili pepperto taste
- Fine saltto taste
- Parsleyto taste
Procedure
0. Wash the eggplant and cut it into cubes or strips about 2 cm thick. Heat a large pan over high heat and add 1 tablespoon of extra virgin olive oil, distributing it evenly.
1. Add the eggplant and sauté over high heat, uncovered, stirring frequently, for about 7-8 minutes, until golden and tender. The goal is to use as little oil as possible but ensure quick and even cooking. Reduce the heat to medium and add the cherry tomatoes and chopped chili pepper. Season lightly with salt.
2. Cook for another 5 minutes, stirring gently, until the tomatoes are softened but still whole. Turn off the heat and add the chopped parsley, stirring well. Serve hot or at room temperature as a light side dish or base for other dishes.
3. You can add a clove of garlic to the pan with the eggplant if you like. If you want spicier, increase the amount of chili pepper or add a few dried chili flakes at the end of cooking.
