Ingredients
- Puff pastry320 g
- Robiola200 g
- Brie100 g
- Carrots8 u (600 g)
- Honey1 tablespoon
- Egg yolk1 u (17 g)
- Fine saltto taste
- Black pepperto taste
- Thymeto taste
Procedure
0. Preheat the oven to 160°C. Wash and dry the carrots, leaving a little of the stem on for a more elegant look.
1. Arrange them on a baking sheet lined with parchment paper, drizzle with extra virgin olive oil, maple syrup (or honey), salt, and pepper. Roast for 25-30 minutes, turning halfway through, until soft and slightly caramelized.
2. Unroll the puff pastry on a baking sheet lined with parchment paper. Fold the edges slightly to create a "frame" effect. Brush the edges with egg yolk to make them golden brown during baking. Prick the base with a fork to prevent it from puffing up too much.
3. In a bowl, mix the cream cheese with the honey, mustard, salt, and pepper until smooth. Spread evenly over the pastry base. Sprinkle the shredded cheese on top.
4. Arrange the roasted carrots on top of the cheese, neatly and slightly overlapping. Bake in a preheated oven at 200°C (400°F) for 20-25 minutes, until the pastry is golden and crispy.
5. Once baked, let it cool slightly. Garnish with fresh thyme and edible flowers for a refined touch.
