  • 0. Preheat the oven to 160°C. Wash and dry the carrots, leaving a little of the stem on for a more elegant look.
  • 1. Arrange them on a baking sheet lined with parchment paper, drizzle with extra virgin olive oil, maple syrup (or honey), salt, and pepper. Roast for 25-30 minutes, turning halfway through, until soft and slightly caramelized.
  • 2. Unroll the puff pastry on a baking sheet lined with parchment paper. Fold the edges slightly to create a "frame" effect. Brush the edges with egg yolk to make them golden brown during baking. Prick the base with a fork to prevent it from puffing up too much.
  • 3. In a bowl, mix the cream cheese with the honey, mustard, salt, and pepper until smooth. Spread evenly over the pastry base. Sprinkle the shredded cheese on top.
  • 4. Arrange the roasted carrots on top of the cheese, neatly and slightly overlapping. Bake in a preheated oven at 200°C (400°F) for 20-25 minutes, until the pastry is golden and crispy.
  • 5. Once baked, let it cool slightly. Garnish with fresh thyme and edible flowers for a refined touch.
