Il Saag Paneer è un piatto vegetariano iconico della cucina del Punjab, a base di spinaci cremosi e cubetti di paneer dorati. Ricco di spezie e dal sapore avvolgente, è perfetto da accompagnare con chapati, naan o riso basmati.   • 0. Bring a large pot of water to a boil and blanch the spinach for 2-3 minutes. Drain and immediately plunge it into ice water to preserve its vibrant green color. Blend the spinach until smooth (you can leave it coarser if you prefer a more rustic texture).
  • 1. Optional: Dust the paneer with cornmeal for extra crispiness. Heat 2 tablespoons of oil or ghee in a pan and fry the paneer cubes until golden brown on all sides. Drain on paper towels and set aside.
  • 2. In the same pan, heat 1 tablespoon of butter or ghee. Add the cumin seeds and let them release their aroma. Add the chopped onion and sauté until golden. Add the garlic and ginger and cook for 1 minute. Add the chopped tomato and cook until thickened. Add the turmeric, chili pepper, and garam masala and mix well.
  • 3. Pour the creamed spinach into the pan with the spice masala. Season with salt and cook for another 5 minutes. If you want a creamier consistency, add 1 tablespoon of heavy cream or Greek yogurt and blend everything together using an immersion blender. Finally, add the golden paneer cubes and mix gently.
