Ingredients
- Eggs6 u (360 g)
- Cluster tomato4 u (800 g)
- Garlic2 cloves
- Golden onion1 u (150 g)
- Sweet paprika1 teaspoon
- Cumin1 teaspoon
- Bell pepper1 u (220 g)
- Extra virgin olive oilto taste
- Corianderto taste
- Chili powderto taste
Procedure
0. Heat a little olive oil in a large, covered skillet. Add the onion and bell pepper. Sauté over medium heat for about 5 minutes until soft.
1. Add the minced garlic, paprika, cumin, and chili pepper. Stir well and cook for another minute until the spices are fragrant.
2. Add the chopped tomatoes, salt, and pepper. Cook over medium-low heat for 10-15 minutes, or until the sauce thickens.
3. Make a few wells in the sauce with a spoon. Crack an egg into each well. Cover the pan and cook for 10-15 minutes, or until the eggs are cooked to your liking.
4. Garnish with chopped fresh cilantro or parsley. Serve the shakshuka hot, ideally with pita bread or a slice of rustic bread to mop up the sauce.
