  • 0. Heat a little olive oil in a large, covered skillet. Add the onion and bell pepper. Sauté over medium heat for about 5 minutes until soft.
  • 1. Add the minced garlic, paprika, cumin, and chili pepper. Stir well and cook for another minute until the spices are fragrant.
  • 2. Add the chopped tomatoes, salt, and pepper. Cook over medium-low heat for 10-15 minutes, or until the sauce thickens.
  • 3. Make a few wells in the sauce with a spoon. Crack an egg into each well. Cover the pan and cook for 10-15 minutes, or until the eggs are cooked to your liking.
  • 4. Garnish with chopped fresh cilantro or parsley. Serve the shakshuka hot, ideally with pita bread or a slice of rustic bread to mop up the sauce.
