I calzoni al forno siciliani sono una specialità della rosticceria siciliana, deliziosi e perfetti per uno spuntino o un pranzo veloce. I calzoni siciliani possono essere farciti anche con altri ingredienti, come salame, funghi o spinaci, a seconda dei gusti.
Ingredients
- Type 00 flour500 g
- Water250 ml
- High-quality cooked ham200 g
- Mozzarella200 g
- Tomato puree100 ml
- Butter50 g
- Parmigiano Reggiano DOP50 g
- Fresh yeast25 g
- Fine salt10 g
- Granulated sugar1 teaspoon
- Dried oreganoto taste
- Black pepperto taste
Procedure
0. Dissolve the yeast in the warm water along with the sugar. In a large bowl, sift the flour and add the salt. Gradually pour the water with the dissolved yeast into the flour, stirring constantly.
1. Add the lard (or butter) and knead until smooth and elastic. Cover the dough with a damp cloth and let it rise in a warm place for about 2 hours, until doubled in size.
2. Dice the mozzarella and cooked ham. In a bowl, combine the mozzarella, ham, tomato sauce, Parmesan, oregano, salt, and pepper.
3. Preheat the oven to 200°C. After the dough has risen, roll it out on a floured surface until it's about 3-4 mm thick. Cut out discs about 15-20 cm in diameter. Place a little filling in the center of each disc.
4. Fold the discs into half-moons, pressing the edges firmly to seal (you can use the tines of a fork to help). Place the calzones on a baking sheet lined with parchment paper. Brush the surface with a little extra virgin olive oil.
5. Bake the calzones for about 20-25 minutes, or until golden brown on top.
6. Let it cool slightly and serve the calzones hot.
