I calzoni al forno siciliani sono una specialità della rosticceria siciliana, deliziosi e perfetti per uno spuntino o un pranzo veloce. I calzoni siciliani possono essere farciti anche con altri ingredienti, come salame, funghi o spinaci, a seconda dei gusti.

  • 0. Dissolve the yeast in the warm water along with the sugar. In a large bowl, sift the flour and add the salt. Gradually pour the water with the dissolved yeast into the flour, stirring constantly.
  • 1. Add the lard (or butter) and knead until smooth and elastic. Cover the dough with a damp cloth and let it rise in a warm place for about 2 hours, until doubled in size.
  • 2. Dice the mozzarella and cooked ham. In a bowl, combine the mozzarella, ham, tomato sauce, Parmesan, oregano, salt, and pepper.
  • 3. Preheat the oven to 200°C. After the dough has risen, roll it out on a floured surface until it's about 3-4 mm thick. Cut out discs about 15-20 cm in diameter. Place a little filling in the center of each disc.
  • 4. Fold the discs into half-moons, pressing the edges firmly to seal (you can use the tines of a fork to help). Place the calzones on a baking sheet lined with parchment paper. Brush the surface with a little extra virgin olive oil.
  • 5. Bake the calzones for about 20-25 minutes, or until golden brown on top.
  • 6. Let it cool slightly and serve the calzones hot.
