  • 0. Wash and dry the cucumbers. Place them on a cutting board and, using the bottom of a cup or a wide knife blade, gently squeeze them until they crack slightly. Then cut them into large, irregular pieces.
  • 1. Place the cucumbers in a colander, sprinkle with coarse salt, and let them sit for 15-20 minutes. This will help draw out excess water and concentrate the flavor.
  • 2. In a small bowl, combine EVOO, chopped chili pepper (fresh or dried), crushed garlic (if using), vinegar or lemon juice, and sugar if you prefer a sweeter balance. Mix well.
  • 3. Rinse the cucumbers briefly to remove excess salt and pat them dry with paper towels. Place them in a bowl, pour the marinade over them, and mix well. Let them marinate for at least 10-15 minutes (or up to 30) before serving.
