  • 0. Chicken Marinade: • In a bowl, combine: lemon juice, grated zest, turmeric, cumin, parsley, salt, pepper, oil, and, if desired, a crushed garlic clove. • Cut the chicken into strips or bite-sized pieces and place in the marinade. Cover and refrigerate for at least 30 minutes (preferably 1 hour if you have time).
  • 1. Blanch the green beans: • Trim the ends of the green beans. • Blanch them in salted water for 6-7 minutes (they should remain slightly crunchy). • Drain them and immerse them in cold water to stop the cooking and keep them green.
  • 2. Cooking the chicken: • Heat a nonstick pan with a drizzle of extra virgin olive oil. • Drain the chicken slightly from the marinade (not completely; the marinade will add flavor) and sauté over medium-high heat for about 5-6 minutes, until golden brown on the outside and cooked through. • At the end of cooking, you can add a little more fresh parsley and a squeeze of lemon if you like.
  • 3. In the same pan, after removing the chicken, heat the oil with the crushed garlic clove and chili pepper (fresh, sliced, or crushed). When the garlic is golden, add the well-drained green beans. Sauté for 3-4 minutes, seasoning with salt.
