I pomodori secchi aggiungono un tocco di dolcezza e sapore intenso che si sposa perfettamente con la delicatezza degli spinaci e la cremosità della ricotta. Se preferisci, puoi arricchire ulteriormente il ripieno con ingredienti come carciofi sott'olio, peperoni arrostiti o zucchine grigliate.
Ingredients
- Type 0 flour500 g
- Water300 ml
- Mozzarella200 g
- Fresh spinach150 g
- Dried tomatoes100 g
- Black olives50 g
- Salted ricotta50 g
- Fine salt10 g
- Dry yeast7 g
- Extra virgin olive oil2 tablespoons
- Granulated sugar1 teaspoon
- Garlic1 clove
Procedure
0. In a bowl, dissolve the dry yeast in the warm water along with the teaspoon of sugar. Let it sit for about 10 minutes, until a light foam forms on the surface.
1. In a large bowl, place the flour and make a well in the center. Add the water, yeast, extra virgin olive oil, and salt. Mix the ingredients with a fork, then continue kneading with your hands until the dough is smooth and elastic.
2. Cover the dough with a damp cloth and let it rise in a warm place for about 2 hours, or until doubled in volume.
3. In a pan, heat the olive oil and add the peeled and crushed garlic. When the garlic is golden, add the fresh spinach and cook for 5-7 minutes, until wilted. Remove the garlic, drain any excess liquid, and let cool.
4. In a bowl, combine the cooked spinach, diced mozzarella, sun-dried tomatoes, black olives, and ricotta. Season with salt, pepper, and a pinch of oregano.
5. After rising, divide the dough into 8 equal portions. Roll out each portion on a lightly floured surface until it forms a thin disk about 15-20 cm in diameter.
6. Spread a generous amount of filling on half of each pastry disc, leaving about 1 cm of excess filling. Fold the other half of the disc over the filling and seal the edges well by pressing with your fingers or using a fork.
7. Preheat the oven to 220°C. Place the calzones on a baking sheet lined with parchment paper. Brush the tops with a little extra virgin olive oil. Bake for about 15-20 minutes, or until golden and crispy.
8. Vegetarian calzones are delicious fresh from the oven, but you can also enjoy them warm. Serve them with a fresh salad for a complete and delicious meal.
