Il Pan di Spagna è una base essenziale della pasticceria, soffice e leggera, perfetta per essere farcita o gustata al naturale. La versione classica non prevede l’uso di lievito, ma si affida esclusivamente alla montatura delle uova per ottenere una consistenza ariosa e spugnosa.
Ingredients
- Granulated sugar150 g
- Type 00 flour75 g
- Potato starch75 g
- Eggs5 u (300 g)
- Fine saltto taste
- Lemon zestto taste
Procedure
0. Preheat oven to 170°C (340°F). Butter and lightly flour a 22cm (9in) cake pan or line it with parchment paper.
1. In a large bowl, combine the whole eggs and sugar. Using an electric whisk or a stand mixer, beat the mixture for 10-15 minutes, until light, fluffy, and fluffy (it should "write," or form a continuous thread when you lift the whisk).
2. Sift together the flour and starch. Add them little by little to the egg mixture, gently folding in with a spatula from the bottom up so as not to deflate the mixture.
3. Pour the batter into the pan and gently level it. Bake at 170°C (340°F) for 35-40 minutes (avoid opening the oven before 30 minutes). Check for doneness with a toothpick: it should come out clean.
4. Remove the sponge cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
