Ingredients

- Type 00 flour200 g
- Cabbage150 g
- Soybean sprouts100 g
- Shiitake mushrooms50 g
- Soy sauce2 tablespoons
- Carrots1 u (75 g)
- Leek1 u (200 g)
- Sesame oil1 tablespoon
- Bell pepper1 u (220 g)
- Zucchini1 u (200 g)
- Cornstarch (Maizena)1 tablespoon
- Black pepperto taste
- Fine saltto taste
- Vegetable oilto taste
Procedure
0. In a bowl, mix the flour, salt, and water until you obtain a smooth batter, similar to crepe batter but slightly thicker. You can add cornstarch to make the sheets crispier.
1. Heat a nonstick pan over medium-high heat. Use a pastry brush to brush a thin layer of batter onto the hot pan, trying to create a very thin layer.
2. Cook for a few seconds, until the edges begin to lift. The sheet should remain soft and pliable. Remove and stack the sheets, separating them with parchment paper or plastic wrap. Cover them with a damp cloth while you prepare the rest of the dough.
3. Heat the sesame oil in a pan or wok. Add the leek or onion and carrots. Cook for 2-3 minutes. Add the cabbage, zucchini, bell pepper, mushrooms, and bean sprouts. Continue cooking over medium heat for 5-6 minutes, until the vegetables are slightly softened.
4. Add the soy sauce, salt, and pepper. Stir well and cook for another minute. Turn off the heat and let the filling cool.
5. Place a generous spoonful of filling in the center of each sheet of pasta. Fold the sides of the sheet toward the center, then roll up the roll starting from the side closest to the filling. Seal the edges by brushing them with a little water to prevent them from opening during frying.
6. Heat plenty of vegetable oil in a deep skillet. Once hot, fry the rolls a few at a time, turning them until golden brown and crispy on all sides (about 4-5 minutes). Drain the rolls on paper towels to remove excess oil.
