  • 0. If using fresh tomatoes, blanch them for a minute in boiling water, then drain, peel, and chop. Clean the calamari and cut them into rings if you haven't already done so. Clean the shrimp, removing the shells and gut. Save the heads and shells to make homemade fish stock.
  • 1. In a large pot, heat the extra virgin olive oil over medium heat. Add the chopped onion and sauté until translucent. Add the garlic and, if desired, chili pepper. Sauté for another minute, being careful not to burn the garlic.
  • 2. Add the diced carrot and celery. Cook for about 5 minutes, stirring occasionally, until the vegetables soften slightly.
  • 3. Pour the white wine into the pan and let the alcohol evaporate, cooking for about 2 minutes.
  • 4. Add the chopped peeled (or fresh) tomatoes. Mash them lightly with a wooden spoon. Add the bay leaf and mix well.
  • 5. Pour the fish (or vegetable) broth into the pot and bring the soup to a boil. Reduce the heat and simmer for about 20-25 minutes, until the calamari is tender and the flavors are concentrated.
  • 6. Add the peeled shrimp to the soup and cook for another 5 minutes, until the shrimp are pink and cooked through.
  • 7. Taste the soup and season with salt and pepper to taste.
  • 8. Remove the bay leaf. Pour the soup into individual bowls. Garnish with chopped fresh parsley. Serve the soup hot with croutons or toasted rustic bread.
