Ingredients
- Beef stew800 g
- Golden onion5 u (750 g)
- Extra virgin olive oil2 tablespoons
- Turmeric1 teaspoon
- Cumin1 teaspoon
- Garlic1 clove
- Fine saltto taste
- Black pepperto taste
Procedure
0. Wash and peel the onions, keeping them whole (if they're large, you can cut them in half). Pat the meat pieces dry with paper towels. Mix the turmeric and cumin in a small bowl.
1. In a pressure cooker (without closing it yet), heat the extra virgin olive oil and add the crushed garlic cloves. After 1 minute, add the meat pieces and brown them well on all sides until golden brown (about 7-10 minutes). Add the mixed spices, stir well, and toast for 30 seconds to release their aroma.
2. Add the whole onions to the pot, placing them on top of the meat. Season with salt and pepper.
3. Close the pressure cooker and bring to pressure over medium heat. When the whistle sounds, reduce the heat slightly and cook for 30 minutes. After 30 minutes, turn off the heat and let the pressure release naturally (or use the quick method if you're in a hurry, but the natural method improves the meat's texture).
