Ingredients
- Cuttlefish500 g
- Tomato puree250 ml
- Garlic1 clove
- Black pepperto taste
- Capers in saltto taste
- Fine saltto taste
- Black olivesto taste
- White wineto taste
- Parsleyto taste
Procedure
0. Start by cleaning the cuttlefish. If they're frozen, you'll need to thaw them completely first. Then, begin sautéing them in a pan with extra virgin olive oil and parsley. Then, add the white wine.
1. Once the alcohol has evaporated, add the tomato puree, salt, pepper, and desalted capers. Cook for 40 minutes. Add the olives during the last ten minutes of cooking.
2. Serve hot with toasted bread or as a condiment for seafood pasta.
